Popular Frostings

Several variations on original frosting recipes!

Found here, this recipe requires hot fudge, found here. While it seems like a lot of work, the fudge filling freezes and can last for a few months, and this recipe is absolutely amazing!!!
Chocolate Fudge Frosting:
Ingredients:
1/2  C butter
1/4 C shortening
1/3 C cocoa powder
2 C powdered sugar
2 tbsp milk
1 tsp vanilla extract
1 C fudge filling

Directions:
1. Cream the butter and shortening.
2. Add the cocoa powder, it will be crumbly.
3. Add the powdered sugar, it will still be crumbly. Make sure to scrape the sides of the mixer.
4. Add the milk and vanilla.
5. Add the fudge filling and cream until mixed. If there are sugar lumps, cream on the highest setting with a splash guard.


Vanilla Frosting:
Ingredients:
1 lb (3.75 C) powdered sugar
1/2 C butter
1/4 C milk
1 tsp vanilla extract

Directions:
1. Beat the butter and powdered sugar for a few minutes on a slow speed. (You probably won't see the butter under all that powdered sugar, but trust me.)
2. On a slow speed, add the vanilla extract. (Keep trusting me.)
3. Slowly add the milk without sloshing the milk or the powdered sugar out of the bowl.
4. As the mixture starts to firm, speed up the mixer to medium, then to high to smooth out the clumps.

Directions:

2. On a slow speed, add the vanilla extract. (Keep trusting me.)
3. Slowly add the milk without sloshing the milk or the powdered sugar out of the bowl.
4. As the mixture starts to firm, speed up the mixer to medium, then to high to smooth out the clumps.
5. Mix the cocoa powder in and beat on high. 



Cream Cheese Frosting:
Ingredients:
1/2 C butter, at room temperature
6 oz cream cheese, at room temperature
1 tsp vanilla extract
3 C powdered sugar

Directions:
1. Beat the butter and the cream cheese until combined and smoothed.
2. Add the vanilla extract on a slow speed.
3. Add the powdered sugar on a medium speed, moving the mixer to high speed once combined to make the frosting completely smooth.

*Add 1tbsp of any fruit juice to sweeten the frosting and add a bit of flavor
*Add 2-3 tbsp of rum or another alcohol to add a bit of pizzazz.



This recipe is so delectable, and can be easily added to for extra decadence.

Sauce, Filling, and Glaze:
Information:
Prep time: 15 minutes
Makes: 1 2/3 cups of sauce or
               1 2/3 cups of filling or
               2 cups of glaze

Ingredients for sauce and filling:
3/4 C heavy whipping cream
2 tbsp  unsalted butter, chopped into pieces
9 oz semi sweet chocolate chips
1/2 tsp vanilla extract

Ingredients for glaze:
1 C  heavy whipping cream
2 tbsp  unsalted butter, chopped into pieces
3 tbsp light corn syrup
9 oz semi sweet chocolate chips
1/2 tsp vanilla extract

Directions:
1. In a medium saucepan over low heat, heat the cream and butter (and corn syrup for the glaze) until the cream is hot and the butter has melted. There should be tiny bubbles, and the temperature should read about 175°F. DO NOT LET THE MIXTURE BOIL.
2. Remove the pan from the heat and add the chocolate chips. Let the mixture sit for 30 seconds.
3. Add the vanilla and whisk the mixture until smooth and creamy, and all of the chocolate has melted.
The sauce, filling, and glaze can be served warm, or cool.

To add a flavoring, mix it in with the melting chocolate.

Sauce flavorings include: 
1 to 2 tbsp dark rum, brandy, Amaretto, Kahlua, orange/raspberry/cherry liqueur or Grand Marnier
1 oz unsweetened chocolate (for a bittersweet chocolate sauce)
1 tsp grated orange zest (goes well with the orange liqueur)
1 tsp instant coffee dissolved in 1 tbs water (goes well with Kahlua)
1/4 tsp peppermint extract



Original Whipped Cream:
Ingredients:
1 C heavy whipping cream or heavy cream
1/2 tsp vanilla extract
1 tbsp sugar


Chocolate Whipped Cream:
Ingredients:
1 C heavy whipping cream or heavy cream
1/2 tsp vanilla extract
2 1/2 tbsp sugar
1 1/2 tbsp Dutch cocoa powder


Coffee Whipped Cream:
Ingredients:
1 C heavy whipping cream or heavy cream
1/2 tsp vanilla extract
1 tbsp sugar
1 tbsp instant coffee, dissolved in the cream


Lemon Whipped Cream:
Ingredients:
1 C heavy whipping cream or heavy cream
1 tsp finely grated lemon rind, in place of the vanilla
1/2 tsp lemon extract
1 tbsp sugar


Orange Whipped Cream:
Ingredients:
1 C heavy whipping cream or heavy cream
1 tsp finely grated orange rind, in place of the vanilla
1/2 tsp lemon extract
1 tbsp sugar


Raspberry Whipped Cream:
Ingredients:
1 C heavy whipping cream or heavy cream
1/2 tsp vanilla extract
1 tbsp sugar
1/2 C lightly sweetened raspberry puree or seedless raspberry jam


Strawberry Whipped Cream:
Ingredients:
1 C heavy whipping cream or heavy cream
1/2 tsp vanilla extract
1 tbsp sugar
1/2 C lightly sweetened strawberry puree or seedless strawberry jam


Nut Whipped Cream:
Ingredients:
1 C heavy whipping cream or heavy cream
1/2 tsp almond extract, in place of the vanilla
1 tbsp sugar
1/2 C mined nuts


Tipsy Whipped Cream:Ingredients:
1 C heavy whipping cream or heavy cream
1-2 tbsp brandy, rum, or bourbon, in place of the vanilla
1 tbsp sugar

Directions:
READ THESE DIRECTIONS BEFORE MIXING
1. In a large mixing bowl whip the cream, vanilla extract, and sugar until smooth and creamy.
2. Cover and chill the mixture, bowl, and whisk for at least 30 minutes.
3. Once chilled, continue to beat until stiff peaks form.
4. If adding additional ingredients: add the cocoa powder with the cream, vanilla extract, and sugar. Let the mixture sit for at least one hour instead of 30 minutes; for the fruit whipped cream, add the fruit slowly after step 3, continuously mixing the cream until stiff peaks form.
5. Taste and add sugar or puree/jam to taste.


Seven Minute Frosting:
Ingredients:
1 1/4 C sugar
1/3 C water
3 large egg whites
1/4 tsp cream of tartar
1 tsp vanilla extract
1/4 tsp almond extract

Directions:
1. Mix sugar, water, egg whites, and cream of tartar in a double boiler (not heated) with a handheld electric mixer on high speed until white and foamy, about 1 minute.
2. Turn the heat on the double boiler, and beat on high speed until the soft peaks form in the frosting, about 7 minutes.
3. Remove the double boiler from the water when the temperature reads 160°F.
4. Add the vanilla and almond extracts.
5. Continue beating the frosting for 2 minutes.
6. The frosting can be refrigerated right away, but either way, let the frosting sit 20 minutes before serving.
